The Elegant Farmer of Mukwonago, Wisconsin is known for its award-winning apple pie. According to food critics of Gourmet Magazine and The Wall Street Journal, its “the best pie in America.” The farm kitchen bakery says the secret is baking the pie in a brown paper bag.
Elegant Farmer keeps its recipe secret, but after the owners baked the pie on a segment of Throwdown with Bobby Flay, Food Network did publish a copycat. However, some secrets shared on, like the shortbread top crust were not incorporated into their copycat—so I created my own!
While living in the Chicago area, the pies were available at local gourmet markets, and I would always take a few when visiting the retired of the Franciscan Sisters of the Sacred Heart.
