Author Biography

Pableaux Johnson (1966–2025), born Paul Michael Johnson, was an American writer, photographer, filmmaker, cook, and designer whose work centered on the food and culture of New Orleans. Though born in New Jersey, he lived in New Orleans for nearly twenty‑five years, deeply connected to his French Cajun heritage. Johnson authored four books on New Orleans cuisine and football tailgating, and his photography—especially of Mardi Gras Indians and second‑line parades—was exhibited in museums and galleries across the United States.
